A botijo is a traditional Spanish vessel used to keep water cool and to keep it from evaporating in hot climates. A botijo, also called búcaro, is a traditional porous clay container designed to contain water. The botijo has the property that once filled, it cools the water that it contains, acting as an evaporative cooler. The botijo has a wide belly and one or more mouths where it is filled and one or more outputs called pitón or pitorro to drink from.
To use the Botijo, fill with water until it is saturated (the clay will absorb some of the water) then fill again. In a short amount of time, the evaporative cooling will make the water ice cold - great to use outdoors, on a picnic or at the beach, no ice needed!
